Sushi San opened on 1st August, 2008 with the idea of promoting the ancient and ‘somewhat healthy’ culture of Japanese cuisine here in Sarajevo. Creator, founder and owner of the Sushi San, Darko Poljak, began making Sushi after he fell in love with the ancient culinary art during 1996 in San Francisco where he tasted it for the first time. Of course, at the very beginning it wasn't that easy to find all the information regarding the recipes in order to make good (no, the Best!) Sushi.

Darko introduced his first version of Maki Sushi with Smoked Salmon and Avocado to his Club ‘Jazz’. Club Jazz existed in the period between September 2004 and July 2005, after closing the club Darko finally decided to open Sushi San and finally introduce his love for the ancient culinary Japanese art to the cultural City of Sarajevo.


The first three months were very much used as a trial period to test the marketplace. With the results of the trial period proving a success, Darko decided to head back to San Francisco to fine-tune his Sushi making skills, he managed to obtain a position at Yoshi's Japanese Restaurant where he was lucky enough to work for the famous Japanese Chef ‘Shotaro Kamio’. In 2008 the San Francisco Chronicle had declared Yoshi's as the very best of the top ten restaurants in the Bay area of San Francisco. The experience and knowledge Darko gained during this time in so prestigious restaurant as Yoshi's was second to none. Armed with his new found skills and knowledge gained while working at Yoshi's in San Francisco, Darko returned to Sarajevo where he restarted his Sushi business on 1st February, 2009.

In September 2009 Darko returns to San Francisco where he spends additional 2 weeks in Yoshi's learning how to fillet, cut and preserve fish from great suhi chef Sam Kawaguchi.

In September 2011 Embassy of Japan in Bosnia and Herzegovina has organized "Days of Japan in Sarajevo". For that ocaasion Embassy of Japan has engaged Darko to talk about sushi and also to present basic steps to make sushi with sushi tasting afterwards. We are proud to anounce that Embassy of Japan has already invited Darko to present sushi during the "Days of Japan in Sarajevo" in september 2012.

Sushi San is located at 33 Musa Ćazim Ćatić street in Sarajevo and has 4 seats at the bar and three seats at the window.
